I arrived at Salterra Luxury Resort & Spa in South Caicos with one delicious assignment: bring a series of experiences to life in paradise, Maximum Flavor style. From the moment I entered the extraordinary penthouse they had prepared for me, complete with thoughtful, bespoke service, I understood that Salterra was more than a beautiful resort. There was a warmth to the entire team. They didn’t simply work together; they moved like a family, each person genuinely invested in making every guest feel cared for.

Our epicurean week began with a welcome reception centered around the pool at their stunning Spa, where a live DJ set the rhythm for the days ahead. An abundant raw bar shimmered beside colorful kombucha cocktails, and I had the chance to personally meet every guest joining me for the experience. That evening, I also met Salterra’s owner, Michael, who shared the dream behind the resort: to create a beautiful space where people could truly connect, a place where they might arrive as strangers but leave as friends. It was a lovely sentiment, but over the next few days, I would watch it become real.

The following morning, our guests boarded boats bound for Salterra’s signature island brunch on a deserted stretch of paradise. As they stepped ashore, they were welcomed with chilled towels and refreshing cocktails before walking through a handmade seashell pathway leading to one magnificent long table. There, surrounded by turquoise water and uninterrupted sky, we cooked over live fire while a DJ played and Whispering Angel rosé flowed freely alongside cocktails made with El Tequileño tequila. Smoke curled into the salty breeze. Glasses clinked. Laughter carried across the water. After brunch, everyone lingered on the spectacular beach, unwilling to hurry away from a day that felt almost too perfect to be real.

Our final evening brought us together for a multicourse, wine-paired dinner at Brine, one of Salterra’s exceptional restaurants. The resort’s food-and-beverage program is truly top-notch, driven by high-quality ingredients and a genuine sense of place. Once again, we gathered around a beautiful long table, but this time something had changed. The polite introductions from the first evening had become inside jokes, shared memories and animated retellings of our island adventure. Just as Michael had imagined, the people who arrived only days earlier as strangers were now dining as friends.

That spirit of connection extends far beyond the table. Salterra’s deep commitment to protecting the surrounding ocean and marine life can be felt throughout the property. Its luxury is not disconnected from South Caicos; it is rooted in respect for the island, its waters and its future.

I came to Salterra to create a few unforgettable events. I left with new friendships, vivid memories and a profound appreciation for a resort that understands true hospitality: extraordinary food, thoughtful service, meaningful experiences and the rare ability to bring people together.

Salterra is not simply a place to visit. It is a place to connect, to celebrate and to remember, and it is, without question, a destination worth its SALT.

And after all of that, I keep coming back to the same ingredient.

S a l t.

Not truffles. Not caviar. Not some rare chile that has to be carried down a mountain by moonlight. Salt, the inexpensive, ordinary, usually overlooked ingredient sitting within arm’s reach of almost every cook on earth.

I started thinking about it differently during my time at Salterra Luxury Resort & Spa in South Caicos while doing a wonderful culinary residency. There, salt is not merely something in a shaker. It is part of the landscape. It is history. It is labor. It is the reason an island became connected to the rest of the world.

For roughly two centuries, sea-salt production was the backbone of the South Caicos economy. Seawater moved into shallow salinas, the sun and wind did their slow work, and what remained was harvested by hand. The industry ended in the 1960s, but its fingerprints are still everywhere: in the old salt ponds, the stone dividing walls, the remnants of windmills and the stories people continue to tell.

Standing there, surrounded by water once transformed into brilliant white crystals, I kept thinking: How did something so small become so powerful?

The answer is that salt never just made dinner taste better. Salt helped make civilization possible.

The First Flavor Amplifier

Salt does something almost magical to food, except it is not magic at all. It is chemistry, and great chemistry is the closest thing a cook has to a superpower.

Used correctly, salt does not simply make food taste salty. It suppresses bitterness, heightens sweetness, sharpens acidity and allows aromas and savory flavors to come forward. A tomato tastes more intensely like a tomato. A steak becomes beefier. Chocolate becomes deeper. Watermelon becomes sweeter. Even a great cocktail can suddenly feel more complete with a nearly invisible touch of saline.

That is why I believe salt is the most important ingredient in cooking. It does not arrive at the party demanding attention. It introduces every other ingredient properly.

You can buy the best chicken, the ripest tomatoes and the most beautiful olive oil available. If you do not season them properly, they will taste like muted versions of themselves. On the other hand, a humble potato with the right amount of salt can stop you mid-bite.

Salt is not the loudest instrument in the orchestra. It is the conductor.

Before Refrigerators, There Was Salt

Today, if we want to keep something fresh, we put it in the refrigerator and move on with our lives. For most of human history, there was no refrigerator waiting in the kitchen. Food came in seasons. Meat spoiled. Fish spoiled. A good harvest could not automatically follow you into winter. Salt changed that.

By drawing out moisture and making food less hospitable to many spoilage organisms, salt gave people time. Fish could survive a voyage. Meat could last beyond the day it was butchered. Vegetables could become pickles and ferments. Milk could become cheese. A harvest could become a pantry..

Think about how many foods we now consider luxurious, comforting or culturally essential that began as answers to one very practical question: How do we keep this from spoiling?

Prosciutto. Country ham. Bacon. Gravlax. Salt cod. Olives. Sauerkraut. Kimchi. Soy sauce. Miso. Parmesan. Feta.

Salt did not merely preserve ingredients. It helped create entirely new ones.

This is the part I find extraordinary: preservation eventually became pleasure. People discovered that when salt, time and technique worked together, food did not simply last longer. It developed new textures, deeper aromas and layers of umami that the fresh ingredient never had.

Necessity may have built the pantry, but flavor made us return to it.

The Ingredient That Moved the World

Once people understood that salt could preserve food, it became more than a kitchen staple. It became an economic engine.

Salt traveled along trade routes. Settlements formed near salt springs, mines and flats. Governments taxed it. Empires controlled it. Communities depended on it. It helped provision armies, fishing fleets, explorers and cities far from where food was grown.

It was valuable not because it was glamorous, but because life worked better when you had it, and became very difficult when you did not.

That story played out vividly in the Turks and Caicos Islands. Beginning in the late 1600s, seasonal salt rakers from Bermuda developed the islands’ natural salt ponds into salinas. For generations, workers endured blinding sun, intense heat and hours in corrosive brine to rake, move and load the crystals that the rest of the world needed.

South Caicos, along with Grand Turk and Salt Cay, became part of that trade. The salt industry gave the island work, commerce and a connection to ships and markets far beyond the Caribbean. Then refrigeration, industrial-scale production and better-equipped competitors changed the economics. By the 1960s, commercial production had ended.

But an industry can disappear without its story vanishing. In South Caicos, the salinas remain like a memory written directly into the earth.

Salt Is Also Part of Us

Salt matters outside the kitchen too. Sodium helps the human body maintain fluid balance, transmit nerve impulses, and contract and relax muscles. In other words, the same ingredient we use to wake up a sauce also helps keep the body’s own electrical system working.

But this is where the conversation needs common sense.

Our bodies require sodium; they do not require an endless supply of it. Too much sodium can contribute to high blood pressure and other health problems, especially for people who are salt-sensitive or have certain medical conditions. The FDA recommends that most adults consume less than 2,300 milligrams of sodium per day, about the sodium in one teaspoon of table salt from all sources, not one teaspoon sprinkled freely over dinner.

The important phrase is from all sources.

For many people, the biggest sodium load is not the pinch used to season fresh vegetables or a piece of fish at home. It is already hiding in packaged foods, sauces, breads, deli meats, snacks and restaurant meals before the saltshaker ever reaches the table.

So no, this is not permission to salt without thought. It is an invitation to cook with intention. Taste as you go. Read labels. Learn where the sodium is coming from. If your doctor has given you a specific limit, follow it. Salt should make food more alive, not become the only thing you can taste.

Why Chefs Season in Layers

One of the biggest differences between restaurant cooking and home cooking is not always butter, equipment or technique. Often, it is timing.

Chefs season throughout the process.

We salt the water. We season the protein. We taste the sauce as it reduces. We adjust the vegetables. We finish with a final crystal only if the dish needs it. Each small addition enters the food at a different moment and does a different job.

Dumping all the salt on at the end can make the surface taste salty while the center remains completely flat. Layering it gives the seasoning time to move through the food and become part of the dish.

There is also no single “best salt” for every task. I use kosher salt for everyday cooking because the crystals are easy to feel between my fingers and distribute evenly. Fine sea salt dissolves quickly and works beautifully when precision matters. Flaky salt is a finishing ingredient; it brings little flashes of crunch and salinity to steak, tomatoes, chocolate, caramel or warm bread.

And please taste before reaching for more. A sauce that will reduce is going to become saltier. Parmesan, olives, capers, cured meat, soy sauce and bouillon are already contributing sodium. Great seasoning is not about memorizing an amount. It is about paying attention.

A Pinch Can Change Everything

Modern food culture loves the spectacular. We chase the cheese pull, the towering garnish, the dramatic table-side pour and whatever ingredient is trending this week. I enjoy theater too, food should be exciting, but spectacle cannot rescue a dish that has not been seasoned. Salt is the opposite of a viral stunt. Most of the time, no one even sees it. They only notice what it did.

The crust on the steak tastes more intense. The soup suddenly feels complete. The grapefruit loses a little of its aggressive bitterness. The cookie tastes more chocolatey. The tomato goes from watery to tasting like August sunlight.

That is Maximum Flavor in its purest form: not adding something merely to make noise, but using exactly what is needed to unlock the full potential of what is already there.

South Caicos reminded me that the most ordinary-looking things can carry enormous stories. Salt kept food. It moved ships. It built economies. It shaped an island. It supports the body. And every day, in kitchens all over the world, it performs one more quiet miracle. It makes food taste more like itself.

That is why, if you ask me to name the most important ingredient in cooking, I will choose salt every single time.

Sometimes the best meals aren’t planned…they’re trusted.

Some of the best restaurants you’ll ever experience won’t come from a travel guide or a viral video. They’ll come from someone who knows the city well enough to say, “Trust me.”

That’s exactly how I found myself at Da Nico in the heart of Little Italy, and it’s a dinner I’ll never forget.

My Personal Memory

Before I even had a chance to open a menu, or even given a menu, they asked me a question I always love hearing: “Would you like to see a menu, or would you like us to do our thing?”

For me, that’s an easy answer every time.

I told them to do their thing, and I’m so glad I did.

There’s a certain level of trust that comes with handing over the experience to people who truly know their craft, and from that moment on, it felt like we were in the best possible hands. Dish after dish arrived with a sense of pride and confidence each one building on the last. What a beautiful experience.

What made I decide to visit this restaurant?

Some of the best restaurants I’ve ever experienced weren’t found on a list, they were recommended by someone who truly knows the city.

While I was in New York for City Cruises Live, my friend Scott Yon insisted we have dinner in Little Italy. “I’m taking you to the best of the best,” he told me. That place was Da Nico.

As a chef, I trust recommendations like that. Scott has spent years creating unforgettable experiences in New York, so when he says a restaurant is special, I listen. I was excited to experience Little Italy through the eyes of someone who knows it so well, rather than simply following a guidebook.

The moment we arrived, I understood exactly why Da Nico has become such an institution. It wasn’t just another Italian restaurant, it felt like the kind of place where generations of families have celebrated milestones, where regulars are greeted by name, and where hospitality is as much a tradition as the recipes themselves.

Sometimes the best travel memories begin with someone simply saying, “Trust me.” Scott was right.

What was the overall atmosphere and experience like?

The restaurant has an unmistakable old-world charm.

Especially if you’re lucky enough to dine outside beneath the lights during warmer months, there’s a romantic energy that feels almost cinematic.

You hear multiple languages around you.

Servers greet returning guests like old friends.

The pace encourages you to stay awhile.

What made it even more memorable was being served by the father-and-son owners themselves. There was something incredibly special about that, it felt like we were welcomed into their family for the evening, with just a hint of that classic New York Italian energy that almost felt like stepping into an episode of The Sopranos.

It doesn’t feel manufactured.

It feels lived in.

The dishes that stood out to me and why?

The homemade pastas immediately caught my attention.

As someone who’s spent years perfecting pasta dishes in my own kitchen, I appreciate restraint. Great Italian food isn’t about overwhelming you with ingredients, it’s about allowing exceptional ingredients to shine.

Every bite tasted comforting rather than complicated.

That’s much harder to achieve than people realize.

What made this restaurant memorable?

It reminded me why Italian cuisine has endured for generations.

Not because it’s trendy.

Because it’s emotional.

Italian food has an incredible ability to make complete strangers feel like family for a couple of hours.

Very few cuisines do that quite the same way.

Why did I visit?

Every city has places that feel transported from somewhere else.

The moment I learned Maison Premiere was inspired by old New Orleans oyster houses with unmistakable Parisian influence, I knew I wanted to experience it for myself. I love restaurants that commit completely to an identity instead of chasing trends.

As a restaurateur, I’m fascinated by spaces that make you forget where you are.

Maison Premiere does exactly that.

My Personal Memory

I remember lingering far longer than I planned.

There was no rush to leave. I had just finished a walk-thru for an event I was hosting the following day at Chelsea Piers. I had no more commitments for the day.

And so I watched bartenders moving with incredible precision, servers expertly explaining oyster varieties, and guests settling deeper into conversations as the evening unfolded.

It reminded me that the best restaurants understand something many businesses forget:

People aren’t paying for food.

They’re paying for permission to lose track of time.

The Overall Experience

Walking through the doors feels like entering another century.

Dim lighting dances across antique mirrors. Marble, brass, vintage wood, candlelight, and one of the most beautiful bars I’ve ever seen immediately slow your heartbeat. Even before your first oyster arrives, the restaurant has already begun telling its story.

Nothing feels accidental.

Every detail, from the music to the glassware, works together to transport you somewhere entirely different.

That’s hospitality through design.

The Food

The oysters were extraordinary.

As a chef, I’m always amazed by how something so simple can reveal so much. Different waters create different personalities. Some oysters arrive intensely briny, others buttery, others almost melon-like in their sweetness.

Pairing them with beautifully executed cocktails transformed the experience into something almost theatrical.

Sometimes luxury isn’t about extravagance.

Sometimes it’s simply impeccable execution.

What made this restaurant memorable?

Commitment!

Maison Premiere never asks permission to be different.

It knows exactly what it is.

I admire that because the same principle applies to building a restaurant brand. The strongest concepts don’t try to appeal to everyone, they create an experience so distinctive that guests become ambassadors for it.

Lombardi’s wasn’t just another pizza stop on my New York itinerary, it was the place! The kind of restaurant every pizza lover should experience at least once.

There’s something incredibly humbling about walking into a dining room that has been serving guests for well over a century. As chefs, we spend so much of our careers chasing innovation, but I’ve always believed it’s just as important to understand where traditions begin. Before you reinvent something, you should experience the original.

Even the walk through Little Italy felt like part of the meal. Every block seemed to whisper stories from another era, making the anticipation even sweeter.

My Personal Story

The first time I walked into Lombardi’s, I was 17 years old on my very first trip to New York City with my family.

By then, I already knew I wanted to become a chef. While most teenagers might have had Broadway shows or Times Square at the top of their list, I couldn’t wait to visit the restaurants that had shaped American culinary history. Walking into America’s first pizzeria felt almost surreal. I remember looking around the dining room thinking about all the people who had sat there before me and how many incredible chefs had probably made this same pilgrimage.

I couldn’t have imagined then that one day I’d open my own award-winning restaurant, write cookbooks, travel the world through food, and build a career around creating memorable dining experiences. But standing inside Lombardi’s at 17, I think a small part of me quietly believed that if I kept working hard enough, maybe one day I’d have my own story to tell.

Every time I return, I’m reminded that every chef starts somewhere. For me, one of those beginnings was a simple coal-fired pizza in New York City.

My Why

Whenever I travel, I don’t start with the newest restaurant. I start with the ones that changed history.

Lombardi’s wasn’t just another pizza stop on my New York list, it was the place I felt every pizza lover owes themselves at least once. There’s something special about standing in a restaurant that has been serving pies for well over a century. As chefs, we spend our lives chasing innovation, but I also believe it’s important to understand where traditions begin. Before you can reinvent something, you should experience the original.

The Food

The coal-fired pizza was the dish that stood out to me!

I mean….. Just look at my face!

The first thing that struck me wasn’t the toppings, it was the crust. Beautiful blistering from the coal oven, just enough char to create bitterness that balanced the sweetness of the tomatoes, and a chew that only comes from dough that’s respected rather than rushed.

Sometimes chefs overcomplicate pizza because we’re trying to prove something.

Lombardi’s doesn’t.

Every ingredient has a purpose, and because there are so few of them, every one has to earn its place.

That’s a lesson every cook should remember.

The Experience

The room feels wonderfully unpretentious.

No one is trying too hard. The tables are close together, conversations spill into one another, pizzas fly from the oven nonstop, and there’s an energy that only comes from restaurants that have been doing something exceptionally well for generations.

It reminds you that hospitality doesn’t always need spectacle. Sometimes confidence is quiet.

The Memory I will be taking home

History has a flavor.

It’s one thing to read about America’s first pizzeria. It’s another to sit inside it, hear the ovens working, watch families passing slices across the table, and realize you’re participating in something much bigger than lunch.

Restaurants like this become part of a city’s identity.
